Wake Up to These Paleo Breakfasts

One of the things that Paleo provides you is a list of diverse, healthy, and delicious ingredients to incorporate into your meals. It also encourages you to cook more, even for breakfast. Instead of grabbing a donut or a Pop-Tart on your way out the door, you will be making breakfasts in the morning and truly enjoying your food. Here are some Paleo breakfasts to try out in the spring.

Paleo-Approved Pancakes

Yes, you can still have pancakes on the Paleo diet! You will just be changing a few ingredients. Pancakes are so fun to make during the spring, whether you are enjoying Spring Break with the kids, or you decide to treat them on Easter morning. You might find some different recipes for Paleo pancakes, but the essential ingredients typically include coconut sugar, tapioca starch, cashew or almond flour, baking soda, salt, eggs, coconut oil, and almond milk. You can then add fruit if you want strawberry or blueberry pancakes, and some organic or raw maple syrup on top when they’re done.

Frittata

The frittata is a way to combine eggs and veggies to make a delicious and filling breakfast. This is not only Paleo-approved, but low in carbs as well. You can use all veggies that are in season during the spring, allowing you to use those fresh veggies from your garden or that you picked up from the farmer’s market. While frittatas often use cheese, if you don’t have dairy on your Paleo diet, it doesn’t need it! Just combine eggs with veggies like cherry tomatoes, asparagus, and broccoli, then add some salt and pepper. You can also add fresh herbs like thyme to the frittata before cooking it.

Breakfast Salad

Who says you can’t have salad for breakfast?! With lots of veggies added to the first meal of the day, it gives you energy in the most nutritious way possible. What you are going to do is make a salad with lots of spring veggies like arugula and mustard greens, asparagus, new potatoes, radishes, and peas. You will then add some breakfast ingredients like a fried egg and bacon bits on top. For the dressing, all you really need is some olive oil and maybe a little vinegar.

Lemon Poppyseed Muffins

Muffins are always a popular choice for breakfast, and there are many Paleo muffins out there to choose from. For spring, lemon poppyseed are an excellent option. These are often made with Paleo-friendly baking powder, almond flour, coconut flour, baking soda, sea salt, homemade applesauce, lemon juice, eggs, honey, and of course your poppy seeds.
