When the seasons change, it gives you a unique opportunity to try a new set of foods. Whether you have been on Paleo for a while or trying it out for the first time in the spring, it is time to find seasonal foods that make delicious and filling dinners. Here are some options to start with.

Salmon and Roasted Asparagus

It seems like fish and seafood goes hand-in-hand with the spring season. This season is typically when you want lighter and fresher foods, so salmon is often comes to mind. Plus, asparagus is one of the top vegetables in season, meaning it is going to be good quality produce and you will save some money on it as well. You can combine these ingredients for a healthy, Paleo meal when you want something on the lighter side. You can make the salmon any way you like from a simple broiled salmon with some salt and pepper, to making lemon salmon or even seasoning it with mustard and rich herbs.

Chicken and Avocado Mango Salsa

Both avocadoes and mangoes are in season during the spring and summer, so you can start enjoying this meal now, and keep having it for the next several months. It is delicious even on a warm night and can be made indoors or outside on your grill. Grill your chicken with some olive oil and seasonings, then make your salsa with mango, avocado, cilantro, lime juice, jalapeno, onion, and salt and pepper. It is as easy as that! Once the chicken is done, pour some of your salsa on top, or you can cube the chicken and mix everything together.

Deconstructed ‘Pasta’ With Veggie Noodles

If you are looking for more of a comfort food in the spring, such as on a rainy night when the family is all indoors with you, then pasta is usually what you want. Of course on Paleo diet, regular pasta is not allowed. However, you can make your own pasta with some veggies and a spiralizer. Zucchini is often used for pasta or ‘zoodles’, but if you don’t have them on hand, you can use other veggies as well. Plus, this can be done as a cold or hot pasta dish, which is another big bonus. Most of the ingredients that go into a typical Italian pasta dish, like manicotti, can be used for your deconstructed dish. This might include mozzarella and parmesan cheese, onion, tomato, basil, oregano, thyme, olive oil, and garlic. Add some ricotta as well if you are going for a lasagna or manicotti-style dish. Add the ingredients to the top of your ‘pasta’ noodles, and you’re good to go.
